Costa Rican Tarrazu Paritilla

From this tropical paradise twixt Pacific and Caribbean comes this divine brew from Tarrazu that makes the perfect everday quaffing coffee. Grown under the shade of the Macadamia trees, it's no surprise that this archetypal Central American bean has a slightly nutty flavour.

The cherries are harvested in summer under high daylight temperatures and cold nights allowing the starches within the fruit to concentrate, resulting in a fine cup with layers of chocolate, orange, vanilla & dried fruit. The sack tells us they are SHG which stands for Strictly High Grown, further evidence of their existence as a living organism surviving & thriving at altitude, slowly extracting their enzymatic nutrients from soil & cloud to ultimately develop ever more complex flavour structure & another indicator of exceptionally high quality.

For the last two years we have been selecting this coffee from a Fairtrade Community Coffee project set-up in Paritilla by D R Wakefield. Here's the news from their last field-trip:

...we were impressed by their professionalism and the work they do with the members of the co-op providing multiple services like credit, technical assistance, training and so on. In conjunction with the co-op, D R Wakefield set up a community coffee project to help increase the value and recognition of the quality of the coffee produced in the communities of La Trinidad, Ojo de Agua and Paritilla.

We were pleased that the premium given to the producers to select the best quality green coffee beans has made a positive impact on their lives. We were extremely lucky and honoured to be present and to hand out the premium to the farmers of La Trinidad. They decided to invest the premium into materials to finish building the main road that provides access to their community.

So, re-investment of premiums in infrastructure once again benefits us all, enabling farmers to produce better quality coffee, by shipping it to the mills quicker and therefore demand a higher price. We get to enjoy a better coffee. It's an upward circle of benefits. This firmly established Atkinson’s favourite gives us some of the most uniformly perfect beans that ever pass through the roaster’s hands. A joy to work with from sack to scoop to roasting drum to cup!
